Jicama
2 cups, peeled and diced
Corn kernels
1 cup, fresh or frozen (thawed)
Red bell pepper
1, diced
Fresh cilantro
1/4 cup, chopped
Lime juice
3 tablespoons, freshly squeezed
Olive oil
2 tablespoons
Honey
1 tablespoon
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste

Instructions

  1. In a large mixing bowl, combine the diced jicama, corn kernels, diced red bell pepper, and chopped cilantro. Toss gently to combine and set aside.
  2. In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper until the dressing is well emulsified and smooth.
  3. Pour the dressing over the salad ingredients and toss thoroughly to ensure everything is evenly coated. This will enhance the flavors and bring the salad to life!
