Jicama
1 medium, peeled and julienned
Watermelon
4 cups, cubed
Cucumber
1 large, peeled, seeded and diced
Mint leaves
1/4 cup, fresh and finely chopped
Lime juice
1/4 cup, freshly squeezed
Honey
2 tablespoons
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, freshly ground, or to taste

Instructions

  1. In a large salad bowl, combine the julienned jicama, cubed watermelon, diced cucumber, and finely chopped mint leaves. Toss gently to mix.
  2. In a separate small bowl, prepare the dressing. Whisk together the freshly squeezed lime juice, honey, salt, and freshly ground black pepper until the honey is fully dissolved and the ingredients are well combined.
  3. Drizzle the dressing over the salad. Toss gently to ensure all the ingredients are evenly coated with the dressing.
  4. Cover the salad and refrigerate for at least 30 minutes. This allows the flavors to meld together for a more intense and harmonized taste.
