Indulge in the creamy delight of Juju Dhau, a traditional Nepali yogurt that epitomizes the rich culinary heritage of Nepal. Made from rich buffalo milk, this yogurt is delicately infused with fragrant saffron and aromatic cardamom, creating a heavenly blend of flavors. Known as the 'king of yogurt,' Juju Dhau is often enjoyed during festivals and special occasions, making it a beloved treat for families across generations. Serve it chilled for a refreshing dessert or snack that will leave your taste buds dancing with joy.

Ingredients

Buffalo milk
1 liter
Sugar
1/4 cup
Cardamom powder
1/2 teaspoon
Saffron strands
a pinch

Instructions

  1. In a large pot, bring the buffalo milk to a gentle boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.
  2. Once boiling, reduce the heat and allow the milk to simmer for another 2-3 minutes. Then, remove it from heat and let it cool to room temperature (around 100°F or 38°C).
  3. Once the milk has cooled, stir in the sugar until fully dissolved. Then, add the cardamom powder and saffron strands, mixing well to combine.
  4. Cover the pot with a clean cloth or lid and place it in a warm, draft-free area. Let it sit undisturbed for 6-8 hours, or until the yogurt has set and has a thick, creamy texture.
  5. After the yogurt has set, transfer it to the refrigerator and chill for at least 4 hours before serving.
  6. To serve, scoop the chilled Juju Dhau into individual bowls or traditional clay pots. Garnish with a few saffron strands for an elegant touch.
