Kabosu
4-5, halved
Granulated sugar
1/2 cup (adjust to taste)
Water
4 cups, cold
Ice
as needed, for serving

Instructions

  1. Cut each kabosu in half and use a citrus juicer or manual press to extract the juice. Strain the juice through a fine sieve to remove any seeds or pulp, if desired.
  2. In a large pitcher, combine the freshly squeezed kabosu juice, cold water, and granulated sugar.
  3. Stir the mixture thoroughly until the sugar is completely dissolved. Taste and adjust the sweetness by adding more sugar if needed.
  4. Chill the kabosu juice in the refrigerator for at least 30 minutes to enhance its refreshing quality.
  5. Serve cold over ice, garnished with a slice of kabosu or a sprig of mint for an extra touch of freshness.
