Kaddu Ki Kheer

Instructions
- In a heavy-bottomed pan, heat the ghee over medium heat. Once hot, add the grated pumpkin and sauté for about 5 minutes, until it softens slightly.
- Pour in the milk and bring the mixture to a boil, stirring occasionally to prevent sticking. Once it reaches a boil, reduce the heat to low and let it simmer for 30 minutes, allowing the flavors to meld and the mixture to thicken.
- Add the sugar and cardamom powder to the pan. Stir well to combine and continue to cook for another 10 minutes, stirring frequently until the kheer reaches your desired consistency.
- Remove from heat and let it cool slightly. Garnish with the chopped cashews, raisins, and almonds just before serving.
- Serve the Kaddu Ki Kheer warm or chilled, according to your preference.
Tips
- For an extra layer of flavor, you can add a pinch of saffron while the milk is boiling.
