Kapenta Stew

- 3 cloves, minced Garlic

- 1 tablespoon Curry powder
- 1 teaspoon Paprika

Instructions
- Rinse the dried kapenta fish in cold water to remove any excess salt. Drain and set aside.
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté for about 5 minutes, or until the onion becomes translucent and fragrant.
- Stir in the chopped tomatoes, curry powder, paprika, and salt. Cook for an additional 5 minutes, allowing the tomatoes to soften and release their juices.
- Carefully add the rinsed kapenta fish to the pan, gently stirring to combine it with the tomato mixture.
- Pour in the water and bring the stew to a gentle simmer. Cover the pan and cook for 15 minutes, allowing the fish to become tender.
- Remove the lid and continue cooking for an additional 5 minutes to let the stew thicken slightly.
- Garnish the stew with fresh cilantro before serving.

- For a spicier kick, consider adding sliced chili peppers or a dash of hot sauce.
