Kare Kare

Ingredients
- 2 lbs, cut into pieces Oxtail
- 1 lb, cleaned and cut into strips Tripe
- 2 tablespoons Cooking oil
- 1 medium, chopped Onion
- 4 cloves, minced Garlic
- 4 cups Beef broth
- 1 cup Peanut butter
- 1 tablespoon Annatto powder
- 2 tablespoons Fish sauce
- to taste Salt
- to taste Ground black pepper
- 1 large, sliced Eggplant
- 1 cup, trimmed String beans
- 2 cups, chopped Bok choy
- for serving Shrimp paste

Instructions
- In a large pot, bring water to a boil and add the oxtail and tripe. Allow to boil for about 1 hour or until the meat is tender. Drain and set aside.
- In a separate pot, heat the cooking oil over medium heat. Sauté the minced garlic and chopped onion until fragrant and translucent, about 3-4 minutes.
- Add the boiled oxtail and tripe to the pot, stirring well to combine the flavors for about 2-3 minutes.
- Pour in the beef broth and add the peanut butter, annatto powder, and fish sauce. Stir well to ensure everything is thoroughly mixed.
- Bring the mixture to a gentle simmer and let it cook for about 2 hours, or until the meat is very tender and the flavors have melded beautifully. Stir occasionally to prevent sticking.
- Add the sliced eggplant, trimmed string beans, and chopped bok choy to the pot. Cook for an additional 5 minutes, until the vegetables are just tender.
- Season with salt and ground black pepper to taste, adjusting as needed.
- Serve the Kare Kare hot with steamed rice and a side of shrimp paste for the authentic Filipino experience.
