Ingredients

Oxtail
2 lbs, cut into pieces
Tripe
1 lb, cleaned and cut into strips
Cooking oil
2 tablespoons
Onion
1 medium, chopped
Garlic
4 cloves, minced
Beef broth
4 cups
Peanut butter
1 cup
Annatto powder
1 tablespoon
Fish sauce
2 tablespoons
Salt
to taste
Ground black pepper
to taste
Eggplant
1 large, sliced
String beans
1 cup, trimmed
Bok choy
2 cups, chopped
Shrimp paste
for serving

Instructions

  1. In a large pot, bring water to a boil and add the oxtail and tripe. Allow to boil for about 1 hour or until the meat is tender. Drain and set aside.
  2. In a separate pot, heat the cooking oil over medium heat. Sauté the minced garlic and chopped onion until fragrant and translucent, about 3-4 minutes.
  3. Add the boiled oxtail and tripe to the pot, stirring well to combine the flavors for about 2-3 minutes.
  4. Pour in the beef broth and add the peanut butter, annatto powder, and fish sauce. Stir well to ensure everything is thoroughly mixed.
  5. Bring the mixture to a gentle simmer and let it cook for about 2 hours, or until the meat is very tender and the flavors have melded beautifully. Stir occasionally to prevent sticking.
  6. Add the sliced eggplant, trimmed string beans, and chopped bok choy to the pot. Cook for an additional 5 minutes, until the vegetables are just tender.
  7. Season with salt and ground black pepper to taste, adjusting as needed.
  8. Serve the Kare Kare hot with steamed rice and a side of shrimp paste for the authentic Filipino experience.
