Crispy, golden-brown chicken katsu, smothered in a rich, aromatic curry sauce, nestled between two slices of freshly toasted bread. Ingredients

Mayonnaise
4 tablespoons
Lettuce
4 leaves
Bread
8 slices
Soy sauce
1 tablespoon
Coconut milk
1 cup
Chicken broth
1 cup
Potato
1, small, diced
Carrot
1, small, sliced
Onion
1, small, sliced
Curry powder
2 tablespoons
All-purpose flour
1/2 cup
Egg
1, beaten
Panko breadcrumbs
1 cup
Chicken breast
2 pieces, boneless and skinless
Salt and pepper
to taste
Vegetable oil
1 tablespoon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. Dip each chicken breast first in all-purpose flour, then in the beaten egg, and finally coat them with panko breadcrumbs.
  4. Place the breaded chicken breasts on a baking sheet and bake for 20-25 minutes, until the chicken is golden brown and crispy.
  5. While the chicken is baking, prepare the curry sauce. Heat vegetable oil in a saucepan over medium heat.
  6. Add the sliced onion, carrot, and diced potato to the saucepan and cook until the vegetables are softened.
  7. Stir in the curry powder and cook for another minute, allowing the spice to bloom.
  8. Pour in the chicken broth, coconut milk, and soy sauce. Stir well and bring the mixture to a simmer.
  9. Simmer the sauce for 10-15 minutes, or until it thickens to your desired consistency.
  10. Remove the chicken from the oven and let it cool slightly before slicing into thin strips.
  11. Toast the bread slices and spread a tablespoon of mayonnaise on each slice.
  12. Place a lettuce leaf on four slices of bread.
  13. Top the lettuce with the sliced katsu chicken and spoon a generous amount of curry sauce over the chicken.
  14. Cover with the remaining bread slices to form sandwiches.
  15. Serve the Katsu Curry Sandwiches warm, and savor the burst of flavors with each bite.
