Katsu Curry Sandwich

Ingredients
- Mayonnaise
- 4 tablespoons
- Lettuce
- 4 leaves
- Bread
- 8 slices
- Soy sauce
- 1 tablespoon
- Coconut milk
- 1 cup
- Chicken broth
- 1 cup
- Potato
- 1, small, diced
- Carrot
- 1, small, sliced
- Onion
- 1, small, sliced
- Curry powder
- 2 tablespoons
- All-purpose flour
- 1/2 cup
- Egg
- 1, beaten
- Panko breadcrumbs
- 1 cup
- Chicken breast
- 2 pieces, boneless and skinless
- Salt and pepper

Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- Dip each chicken breast first in all-purpose flour, then in the beaten egg, and finally coat them with panko breadcrumbs.
- Place the breaded chicken breasts on a baking sheet and bake for 20-25 minutes, until the chicken is golden brown and crispy.
- While the chicken is baking, prepare the curry sauce. Heat vegetable oil in a saucepan over medium heat.
- Add the sliced onion, carrot, and diced potato to the saucepan and cook until the vegetables are softened.
- Stir in the curry powder and cook for another minute, allowing the spice to bloom.
- Pour in the chicken broth, coconut milk, and soy sauce. Stir well and bring the mixture to a simmer.
- Simmer the sauce for 10-15 minutes, or until it thickens to your desired consistency.
- Remove the chicken from the oven and let it cool slightly before slicing into thin strips.
- Toast the bread slices and spread a tablespoon of mayonnaise on each slice.
- Place a lettuce leaf on four slices of bread.
- Top the lettuce with the sliced katsu chicken and spoon a generous amount of curry sauce over the chicken.
- Cover with the remaining bread slices to form sandwiches.
- Serve the Katsu Curry Sandwiches warm, and savor the burst of flavors with each bite.
Tips
- While this recipe uses chicken, you can easily substitute it with pork or tofu for a variation. You can also add some heat to the curry sauce with a dash of chili powder if you like it spicy.
