Ingredients

Ground beef or lamb
1 pound (450g)
Onion
1 medium, grated
Garlic
2 cloves, minced
Ground cumin
1 teaspoon
Ground coriander
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Sumac
1 teaspoon
Olive oil
2 tablespoons (for brushing)
Skewers
4 (soaked in water if wooden)

Instructions

  1. In a large bowl, combine the ground beef or lamb, grated onion, minced garlic, ground cumin, ground coriander, salt, black pepper, and sumac. Mix well to combine.
  2. Divide the mixture into 4 equal portions and shape each portion into a long, cylindrical shape around a skewer.
  3. Preheat the grill to medium-high heat.
  4. Brush the kebabs with olive oil and place them on the grill.
  5. Grill for about 6-8 minutes, turning occasionally, until the kebabs are cooked through and nicely browned.
  6. Remove the kebabs from the grill and let them rest for a few minutes.
  7. Serve the Kebab Koobideh with saffron rice, grilled vegetables, and a generous side of yogurt sauce. Enjoy!
