Keto Buffalo Cauliflower Bites

These crispy and spicy buffalo cauliflower bites are a delicious keto-friendly alternative to traditional buffalo wings.

Ingredients

  • Celery sticks (for serving)
  • Ranch dressing (for serving)
  • Butter (2 tablespoons, melted)
  • Hot sauce (1/4 cup)
  • Egg (1, beaten)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Paprika (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Almond flour (1/2 cup)
  • Cauliflower (1 head, cut into florets)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, garlic powder, paprika, salt, and black pepper.
  3. Dip each cauliflower floret into the beaten egg, then coat it with the almond flour mixture. Place the coated florets on the prepared baking sheet.
  4. Bake for 20-25 minutes, or until the cauliflower is crispy and golden brown.
  5. In a small bowl, mix hot sauce and melted butter.
  6. Remove the cauliflower from the oven and drizzle the hot sauce mixture over the florets. Toss to coat evenly.
  7. Return the cauliflower to the oven and bake for an additional 5 minutes.
  8. Serve the buffalo cauliflower bites with ranch dressing and celery sticks.
