Keto Cauliflower Mac and Cheese

Indulge in this creamy and cheesy Keto Cauliflower Mac and Cheese, a delicious low-carb alternative to a classic comfort food. By swapping traditional pasta with tender cauliflower florets, this dish retains all the savory and rich flavors that mac and cheese lovers crave, while being friendly to your ketogenic lifestyle. With a velvety cheese sauce made from a blend of cream cheese, cheddar, and Parmesan, this dish is perfect for satisfying your cravings without the carbs. A sprinkle of fresh parsley adds a pop of color and freshness, making it not only a treat for the taste buds but also a feast for the eyes. Historically, mac and cheese dates back to the 1700s, but this modern twist makes it suitable for today's health-conscious diners.

Ingredients

Cauliflower
1 large head, cut into florets
Heavy cream
1 cup
Cream cheese
8 ounces, softened
Cheddar cheese
1 cup, shredded
Parmesan cheese
1/2 cup, grated
Garlic powder
1 teaspoon
Onion powder
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon, or to taste
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain well and set aside.
  3. In a medium saucepan, heat the heavy cream over medium heat until hot but not boiling.
  4. Add the cream cheese to the saucepan and stir until melted and smooth.
  5. Mix in the shredded cheddar cheese and grated Parmesan cheese, stirring until the cheese is fully melted and the sauce is creamy.
  6. Stir in the garlic powder, onion powder, salt, and black pepper until well combined.
  7. Add the cooked cauliflower to the cheese sauce and gently stir to coat the florets evenly.
  8. Transfer the cauliflower mixture to a greased baking dish and spread it out evenly.
  9. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.

Tips

  • 💡 For added flavor, consider mixing in cooked bacon or crumbled sausage before baking.
  • 💡 Experiment with different cheese blends, such as Gouda or Monterey Jack, for unique twists.
  • 💡 If you prefer a crunchy topping, sprinkle some crushed pork rinds or almond flour on top before baking.
