Keto Chicken Caesar Salad

This delectable Keto Chicken Caesar Salad is a low-carb twist on the beloved classic, delivering all the rich flavors of a traditional Caesar with none of the guilt! Tender, grilled chicken breast sits atop a bed of crisp romaine lettuce, generously drizzled with a creamy homemade Caesar dressing and topped with freshly grated Parmesan cheese. Perfect for satisfying your cravings while sticking to your keto lifestyle, this salad is as nutritious as it is delicious.

Serves 2

Ingredients

Chicken breasts
2, boneless and skinless
Salt
to taste
Black pepper
to taste
Garlic
2 cloves, minced
Olive oil
2 tablespoons, plus more for drizzling
Romaine lettuce
1 large head, chopped
Parmesan cheese
1/2 cup, grated, plus more for garnish
Caesar dressing
1/4 cup

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a small bowl, mix together the minced garlic, olive oil, salt, and pepper. Rub this mixture all over the chicken breasts.
  3. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
  4. Remove the chicken from the grill and let it rest for 5 minutes. Slice it into thin strips.
  5. In a large bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and Caesar dressing. Toss well to ensure the lettuce is evenly coated.
  6. Divide the salad onto plates and top generously with the sliced grilled chicken.
  7. Drizzle with additional olive oil and sprinkle with more grated Parmesan cheese, if desired.
  8. Serve immediately and enjoy the delightful blend of flavors!

Tips

  • 💡 For an extra kick, consider adding chopped anchovies or a splash of Worcestershire sauce to the dressing.
  • 💡 You can also substitute the grilled chicken with shrimp or steak for a different protein option.
  • 💡 If you're short on time, rotisserie chicken can be a great shortcut.
