Servings: 4

Ingredients

Dark chocolate (70% or higher)
8 ounces, chopped
Heavy cream
1 cup, divided
Erythritol or stevia
1/4 cup, powdered (adjust to taste)
Vanilla extract
1 teaspoon
Salt
1/4 teaspoon
Dark chocolate shavings
for garnish
Whipped cream
for topping

Instructions

  1. Begin by melting the dark chocolate. Place the chopped chocolate in a heatproof bowl set over a pot of simmering water (double boiler method). Stir gently until the chocolate is completely melted and smooth. Remove the bowl from heat and let it cool slightly.
  2. While the chocolate is cooling, pour 3/4 cup of heavy cream into a mixing bowl. Using an electric mixer, whip the cream until soft peaks form.
  3. Add the powdered erythritol or stevia, vanilla extract, and salt to the whipped cream. Gently fold in the melted chocolate using a rubber spatula until fully combined, taking care not to deflate the whipped cream.
  4. Spoon or pipe the mousse mixture into serving glasses or bowls, filling them about three-quarters full.
  5. Cover the glasses with plastic wrap and chill in the refrigerator for at least 2 hours, or until the mousse is set and creamy.
  6. Before serving, top each mousse with a dollop of whipped cream and sprinkle with dark chocolate shavings for an elegant touch.
  7. Serve chilled and enjoy the rich flavors of this keto chocolate mousse!
