Ingredients
- Unsweetened cocoa powder
- 1/2 cup, for coating
- Stevia or low-carb sweetener
- 2 tablespoons, or to taste
- Vanilla extract
- 1 teaspoon
- Butter
- 1/4 cup
- Heavy cream
- 1/2 cup
- Dark chocolate
- 8 ounces, finely chopped
Instructions
- Place the finely chopped dark chocolate in a heatproof bowl.
- In a small saucepan, combine the heavy cream and butter. Heat over low heat until the butter has melted and the mixture is hot, but not boiling.
- Pour the hot butter and cream mixture over the chopped chocolate. Let it sit for 1-2 minutes to melt the chocolate.
- Add the vanilla extract and your choice of low-carb sweetener to the chocolate mixture. Stir until the mixture is smooth and the sweetener has fully dissolved.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is solid enough to shape into balls.
- Using a small cookie scoop or spoon, scoop out portions of the chilled chocolate mixture. Roll them into balls.
- Roll the truffle balls in unsweetened cocoa powder to coat them evenly.
- Place the coated truffles on a baking sheet lined with parchment paper. Refrigerate for another 30 minutes to allow the truffles to fully set.
