Salt
to taste
Lime juice
2 tablespoons
Fish sauce
1 tablespoon
Coconut milk
1 can (400 ml)
Red curry paste
2 tablespoons
Ginger
1 tablespoon, freshly grated
Garlic
3 cloves, minced
Onion
1 medium, diced
Coconut oil
2 tablespoons
Chicken breasts
2, cubed

Instructions

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the diced onion, minced garlic, and grated ginger to the skillet, sautéing until the ingredients release their fragrant aromas and the onion becomes translucent.
  3. Add the cubed chicken to the skillet, cooking until it's browned on all sides.
  4. Stir in the red curry paste, allowing it to cook for another minute so that it can fully release its flavors.
  5. Pour in the coconut milk, fish sauce, and lime juice, stirring well to combine. This forms your deliciously aromatic curry sauce.
  6. Reduce the heat to low and let the dish simmer for 15 minutes. This allows the chicken to cook through and absorb the flavors.
  7. Taste the curry and season with salt as needed.
  8. Serve the curry hot, garnishing it with a generous sprinkle of fresh cilantro for a burst of freshness.
  9. Enjoy your delicious and aromatic Keto Coconut Curry Chicken!

Tips

  • 💡 For a spicier kick, you can add a diced red chili or a sprinkle of chili flakes.
  • 💡 If you prefer a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir this into the curry during the simmering stage.
  • 💡 This dish pairs wonderfully with cauliflower rice for a complete keto meal.
