Ingredients

Original recipe serves 4

Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Apple cider vinegar
2 tablespoons
Olive oil
3 tablespoons
Fresh dill
2 tablespoons, finely chopped
Cherry tomatoes
1 cup, halved
Red onion
1/2 cup, thinly sliced
Cucumbers
2 large, thinly sliced

Instructions

  1. In a large mixing bowl, combine the thinly sliced cucumbers, thinly sliced red onion, halved cherry tomatoes, and finely chopped fresh dill. Toss until all the ingredients are well distributed.
  2. In a separate, smaller bowl, whisk together the olive oil and apple cider vinegar. Season the mixture with salt and pepper, adjusting to your taste preference.
  3. Gradually pour the dressing over the cucumber mixture, ensuring every slice gets a share of this tangy delight. Toss the salad gently to coat evenly.
  4. Cover the bowl and refrigerate for at least 30 minutes. This allows the cucumbers to marinate and the flavors to meld together, resulting in a more flavorful salad.
  5. Before serving, give the salad a quick mix to redistribute the dressing. Serve chilled for a refreshing and crisp taste sensation. Enjoy!

Tips

  • 💡 For an extra burst of flavor, add a clove of minced garlic to the dressing.
  • 💡 If you're not on a strict keto diet, adding a sprinkle of feta cheese can elevate this salad to new levels.
