This delightful Keto Frittata with Spinach and Feta is a hearty, nutritious dish that marries the earthy flavor of fresh spinach with the creamy tang of feta cheese. Ideal for breakfast, brunch, or even a light dinner, this frittata is low in carbohydrates but high in deliciousness. Frittatas have their origins in Italian cuisine, where they were traditionally made with whatever ingredients were available. This version showcases the vibrant green of spinach, making it as visually appealing as it is tasty.

Servings: 6

Ingredients

Olive oil
2 tablespoons
Black pepper
1/2 teaspoon, freshly cracked
Salt
1/2 teaspoon
Heavy cream
1/4 cup
Eggs
6 large
Feta cheese
1 cup, crumbled
Fresh spinach
3 cups, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Set aside to cool slightly.
  3. In a mixing bowl, whisk together the eggs, heavy cream, salt, and freshly cracked black pepper until well combined.
  4. Grease a baking dish (approximately 9-inch round or square) with a little olive oil. Spread the cooked spinach evenly across the bottom of the dish.
  5. Pour the egg mixture over the spinach, ensuring it is evenly distributed. Sprinkle the crumbled feta cheese generously on top.
  6. Bake in the preheated oven for 20-25 minutes, or until the frittata is set in the center and golden brown on top.
  7. Remove from the oven and let it cool for a few minutes before slicing into wedges for serving.
  8. Enjoy your delicious keto frittata with a side of fresh salad or sliced avocado for added flavor and nutrition!
