Keto Goulash

This keto-friendly goulash is a hearty and flavorful dish made with tender beef, low-carb vegetables, and a rich tomato-based sauce.

Ingredients

  • Fresh parsley (2 tablespoons, chopped)
  • Sour cream (1/2 cup)
  • Olive oil (2 tablespoons)
  • Salt and pepper (to taste)
  • Caraway seeds (1 teaspoon)
  • Paprika (2 teaspoons)
  • Beef broth (2 cups)
  • Tomato paste (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Bell pepper (1 large, chopped)
  • Onion (1 large, chopped)
  • Beef stew meat (2 pounds, cubed)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
  3. In the same pot, add the chopped onion, bell pepper, and minced garlic. Cook until the vegetables are softened.
  4. Add the tomato paste, paprika, caraway seeds, salt, and pepper. Stir to combine.
  5. Return the beef stew meat to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender.
  6. Serve hot, garnished with a dollop of sour cream and chopped fresh parsley.
