Keto Hungarian Goulash

Experience a taste of Hungary with this Keto-friendly Goulash. This heartwarming dish is brimming with tender beef, vibrant low-carb vegetables, all nestled in a succulent tomato-based sauce. Its robust flavor profile is a testament to the rich culinary traditions of Central Europe.

Ingredients

Fresh parsley
1/4 cup, chopped
Sour cream
1/2 cup
Olive oil
2 tablespoons
Salt and pepper
to taste
Caraway seeds
1 teaspoon
Paprika
2 tablespoons
Beef broth
4 cups
Tomato paste
2 tablespoons
Garlic
3 cloves, minced
Bell pepper
1, diced
Onion
1 medium, chopped
Beef stew meat
2 pounds, cut into 1-inch cubes

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef stew meat and sear until browned on all sides. Once browned, remove the meat from the pot and set aside.
  3. In the same pot, add the chopped onion, bell pepper, and minced garlic. Sauté the vegetables until they are softened and the onions are translucent.
  4. Add the tomato paste, paprika, caraway seeds, salt, and pepper to the pot. Stir everything together until the vegetables are well coated.
  5. Return the browned beef to the pot. Pour in the beef broth and stir everything together.
  6. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 1 hour, or until the beef is tender and the flavors have melded together.
  7. Serve the goulash hot, garnished with a dollop of sour cream and a sprinkle of fresh chopped parsley.
