
Keto Goulash
This keto-friendly goulash is a hearty and flavorful dish made with tender beef, low-carb vegetables, and a rich tomato-based sauce.
Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Sour cream (1/2 cup)
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Caraway seeds (1 teaspoon)
- Paprika (2 teaspoons)
- Beef broth (2 cups)
- Tomato paste (2 tablespoons)
- Garlic (3 cloves, minced)
- Bell pepper (1 large, chopped)
- Onion (1 large, chopped)
- Beef stew meat (2 pounds, cubed)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.
- In the same pot, add the chopped onion, bell pepper, and minced garlic. Cook until the vegetables are softened.
- Add the tomato paste, paprika, caraway seeds, salt, and pepper. Stir to combine.
- Return the beef stew meat to the pot and pour in the beef broth. Bring to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender.
- Serve hot, garnished with a dollop of sour cream and chopped fresh parsley.
