Instructions
- Preheat the oven to 375°F (190°C).
- Bring a pot of salted water to a boil. Add the trimmed green beans and cook for 5 minutes until they are bright green and tender-crisp. Drain and set aside.
- In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon and place it on a paper towel-lined plate, leaving the rendered fat in the skillet.
- In the same skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is softened and translucent.
- Reduce the heat to low and add the softened cream cheese, heavy cream, and grated Parmesan cheese to the skillet. Stir until the mixture is well combined and creamy.
- Add the cooked green beans and crispy bacon to the creamy mixture. Toss to coat the green beans evenly and season with salt and pepper to taste.
- Transfer the green bean mixture to a greased baking dish, spreading it out evenly. Sprinkle almond flour evenly over the top for a crunchy topping.
- Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the almond flour topping is golden brown.
- Serve hot and enjoy this delightful keto-friendly dish!
