Servings: 4

Ingredients

Chicken breasts
4, boneless and skinless
Salt
to taste
Black pepper
to taste
Butter
4 tablespoons, divided
Lemon
1, juiced and zested
Garlic
4 cloves, minced
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Once melted and bubbling, add the seasoned chicken breasts.
  4. Cook the chicken for 3-4 minutes on each side until golden brown. Ensure the chicken is cooked through but not yet fully done, as it will finish cooking in the oven.
  5. Transfer the browned chicken breasts to a baking dish.
  6. Squeeze the juice of the lemon over the chicken, ensuring each piece is coated.
  7. In a small saucepan, melt the remaining 2 tablespoons of butter. Once melted, add the minced garlic and cook for 1-2 minutes until fragrant, making sure not to burn the garlic.
  8. Pour the garlic butter mixture over the chicken breasts, allowing it to seep into the chicken.
  9. Sprinkle the lemon zest over the top for added brightness.
  10. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  11. Remove from the oven and let it rest for a few minutes before garnishing with fresh parsley.
  12. Serve warm, and enjoy the rich flavors of this delightful dish!
