Avocado oil
2 tablespoons
Salt and pepper
1/2 teaspoon each, or to taste
Dijon mustard
1 tablespoon
Lemon juice
1 tablespoon
Fresh dill
2 tablespoons, finely chopped
Green onions
2, finely chopped
Egg
1, beaten
Almond flour
1/2 cup
Fresh salmon fillets
2 cups, cooked and flaked

Instructions

  1. In a large bowl, combine the cooked and flaked salmon, almond flour, beaten egg, chopped green onions, fresh dill, lemon juice, Dijon mustard, salt, and pepper. Ensure all ingredients are well incorporated.
  2. Shape the mixture into round patties, using about 1/4 cup of the mixture for each. You should get around 8 patties.
  3. Heat the avocado oil in a non-stick skillet over medium heat.
  4. Carefully place the salmon cakes into the skillet, ensuring not to overcrowd the pan.
  5. Cook the salmon cakes for approximately 3-4 minutes per side, until they're golden brown. Ensure they're cooked thoroughly.
