Ingredients
- Almond flour
- 1 cup
- Unsalted butter
- 1/4 cup, melted
- Large eggs
- 4, divided
- Salt
- 1/2 teaspoon, divided
- Black pepper
- 1/2 teaspoon, divided
- Heavy cream
- 1/2 cup
- Ground sausage
- 1 pound
- Fresh spinach
- 2 cups, chopped
- Cheddar cheese
- 1 cup, shredded
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the almond flour, melted butter, 1 egg, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix until a dough forms.
- Press the dough into the bottom and up the sides of a greased 9-inch pie dish to form the crust. Bake for 10 minutes, then set aside to cool slightly.
- In a skillet over medium heat, cook the ground sausage until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from the skillet and set aside.
- In a separate bowl, whisk together the remaining 3 eggs, heavy cream, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
- Spread the cooked sausage and spinach evenly over the pre-baked crust. Sprinkle the shredded cheddar cheese over the filling.
- Pour the egg mixture over the filling in the pie dish, ensuring it is evenly distributed.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and golden brown on top.
- Allow the quiche to cool for at least 5 minutes before slicing and serving.
