Keto Sausage and Spinach Quiche

Ingredients

Almond flour
1 cup
Unsalted butter
1/4 cup, melted
Large eggs
4, divided
Salt
1/2 teaspoon, divided
Black pepper
1/2 teaspoon, divided
Heavy cream
1/2 cup
Ground sausage
1 pound
Fresh spinach
2 cups, chopped
Cheddar cheese
1 cup, shredded

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the almond flour, melted butter, 1 egg, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix until a dough forms.
  3. Press the dough into the bottom and up the sides of a greased 9-inch pie dish to form the crust. Bake for 10 minutes, then set aside to cool slightly.
  4. In a skillet over medium heat, cook the ground sausage until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from the skillet and set aside.
  6. In a separate bowl, whisk together the remaining 3 eggs, heavy cream, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
  7. Spread the cooked sausage and spinach evenly over the pre-baked crust. Sprinkle the shredded cheddar cheese over the filling.
  8. Pour the egg mixture over the filling in the pie dish, ensuring it is evenly distributed.
  9. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and golden brown on top.
  10. Allow the quiche to cool for at least 5 minutes before slicing and serving.
