
Keto Stuffed Bell Peppers
These keto stuffed bell peppers are filled with a flavorful mixture of ground beef, cauliflower rice, and cheese.
Ingredients
- Fresh parsley (2 tablespoons, chopped)
- Shredded mozzarella cheese (1 cup)
- Salt and pepper (to taste)
- Italian seasoning (1 teaspoon)
- Tomato sauce (1/2 cup)
- Garlic (2 cloves, minced)
- Onion (1 medium, diced)
- Cauliflower rice (1 cup)
- Ground beef (1 pound)
- Bell peppers (4 large)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
- Stir in the cauliflower rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
- Fill each bell pepper with the ground beef mixture and place them in a baking dish.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and sprinkle the shredded mozzarella cheese on top of each stuffed pepper.
- Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
