Keto Taco Salad

This delicious and satisfying keto taco salad is packed with flavor and healthy fats.

Ingredients

  • Salt and pepper (to taste)
  • Lime (1, juiced)
  • Cilantro (2 tablespoons, chopped)
  • Sour cream (1/4 cup)
  • Cheddar cheese (1/2 cup, shredded)
  • Red onion (1/4 cup, thinly sliced)
  • Avocado (1, diced)
  • Cherry tomatoes (1 cup, halved)
  • Romaine lettuce (4 cups, chopped)
  • Taco seasoning (2 tablespoons)
  • Ground beef (1 pound)

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the taco seasoning and cook for an additional 2 minutes. Remove from heat and set aside.
  3. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, diced avocado, sliced red onion, and shredded cheddar cheese.
  4. In a small bowl, whisk together the sour cream, chopped cilantro, lime juice, salt, and pepper to make the dressing.
  5. Add the cooked ground beef to the salad mixture and toss to combine.
  6. Drizzle the dressing over the salad and toss again to coat evenly.
