Ingredients
- Eggs
- 4
- Powdered erythritol
- 1/2 cup
- Cream cheese
- 8 oz
- Heavy cream
- 1 cup
- Strong brewed coffee
- 1 cup
- Sugar-free vanilla extract
- 1 teaspoon
- Keto-friendly ladyfingers
- 12
- Cocoa powder
- 2 tablespoons
- Sugar-free dark chocolate
- 1 oz, grated
Instructions
- Start by separating the egg yolks from the whites. Set the whites aside for another recipe.
- In a large mixing bowl, whisk the egg yolks with the powdered erythritol until the mixture is creamy.
- Add in the cream cheese and continue beating until the mixture is well combined and smooth.
- In a separate bowl, whip the heavy cream until it forms stiff peaks.
- Gently fold the whipped cream into the cream cheese mixture until well combined. This is your Tiramisu filling.
- Combine the brewed coffee and sugar-free vanilla extract in a shallow dish.
- Dip each keto-friendly ladyfinger into the coffee mixture, ensuring both sides are well coated, but not soggy.
- Arrange a layer of soaked ladyfingers in the bottom of a serving dish.
- Spread half of the cream cheese mixture over the ladyfingers.
- Repeat the layers with the remaining ladyfingers and cream cheese mixture.
- Dust the top layer with cocoa powder and sprinkle with grated sugar-free dark chocolate.
- Refrigerate the Tiramisu for at least 4 hours, or overnight, to allow the flavors to meld together.
