
Key Lime Cheesecake
This creamy and tangy key lime cheesecake is the perfect dessert for any occasion.
Ingredients
- Key lime slices (for garnish)
- Whipped cream (for topping)
- Eggs (3)
- Vanilla extract (1 teaspoon)
- Key lime zest (1 tablespoon)
- Key lime juice (1/4 cup)
- Sour cream (1/2 cup)
- Granulated sugar (3/4 cup)
- Cream cheese (16 oz)
- Unsalted butter (1/4 cup, melted)
- Graham cracker crumbs (1 1/2 cups)
Instructions
- Preheat the oven to 325°F.
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the sour cream, key lime juice, key lime zest, and vanilla extract to the cream cheese mixture. Mix until well combined.
- Add the eggs, one at a time, beating well after each addition.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set and the edges are slightly golden.
- Remove the cheesecake from the oven and let it cool to room temperature.
- Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set.
- Before serving, top the cheesecake with whipped cream and garnish with key lime slices.
