Khailmag Guril - Traditional Mongolian Grilled Lamb and Vegetables

- Green onions

- 1 inch piece, grated

- Soy sauce
- 1/4 cup
- Mushrooms
- 1 cup, sliced
- Zucchini
- 1, sliced into 1/2 inch thick rounds
- Bell peppers
- 2, cut into 1 inch pieces
- Onion
- 1, cut into 1 inch pieces
- Lamb shoulder
- 1 pound, cut into 1 inch cubes
Instructions
- In a large mixing bowl, combine soy sauce, minced garlic, grated ginger, sesame oil, salt, and pepper. Stir until all ingredients are well mixed.
- Add the cubed lamb shoulder to the marinade, ensuring each piece is well coated. Let it marinate for at least 20 minutes, or for better results, overnight in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb cubes onto skewers, alternating with the slices of mushrooms, zucchini, bell peppers, and onion.
- Grill the skewers for about 10 minutes, turning them occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, ensuring a juicy and flavorful bite.
