Servings: 4

Ingredients

Green onions
2, finely chopped
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Sesame oil
2 tablespoons
Ginger
1 inch piece, grated
Garlic
3 cloves, minced
Soy sauce
1/4 cup
Mushrooms
1 cup, sliced
Zucchini
1, sliced into 1/2 inch thick rounds
Bell peppers
2, cut into 1 inch pieces
Onion
1, cut into 1 inch pieces
Lamb shoulder
1 pound, cut into 1 inch cubes

Instructions

  1. In a large mixing bowl, combine soy sauce, minced garlic, grated ginger, sesame oil, salt, and pepper. Stir until all ingredients are well mixed.
  2. Add the cubed lamb shoulder to the marinade, ensuring each piece is well coated. Let it marinate for at least 20 minutes, or for better results, overnight in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated lamb cubes onto skewers, alternating with the slices of mushrooms, zucchini, bell peppers, and onion.
  5. Grill the skewers for about 10 minutes, turning them occasionally, until the lamb is cooked to your desired doneness and the vegetables are tender and slightly charred.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, ensuring a juicy and flavorful bite.
  7. Garnish with finely chopped green onions and serve hot. Consider serving with a side of steamed rice or a fresh salad for a complete meal.
