All-purpose flour
2 cups
Ghee
1/2 cup
Water
as needed for kneading
Oil
for deep frying
Sugar
1 cup
Water
1 cup (for syrup)
Cardamom powder
1 teaspoon
Pistachios
1/4 cup, finely chopped
Almonds
1/4 cup, finely chopped
Cashews
1/4 cup, finely chopped

Instructions

  1. In a large mixing bowl, combine the all-purpose flour and ghee. Work the two together until the mixture takes on the texture of breadcrumbs.
  2. Gradually add water and knead the mixture into a dough that is smooth and pliable. Be mindful not to over-knead as it can make the dough tough.
  3. Cover the dough with a damp cloth and allow it to rest for 15 minutes. This will help the dough to relax and make it easier to roll.
  4. Divide the rested dough into small, equal-sized portions. Roll out each portion into a thin circle.
  5. Heat oil in a deep frying pan. When the oil is hot, gently slide in the rolled dough circles and fry them until they turn a beautiful golden brown and are crispy to the touch. Drain the fried dough circles on a paper towel to remove excess oil.
  6. Prepare the sugar syrup by combining sugar and water in a separate saucepan. Bring the mixture to a boil, then reduce the heat and simmer until the sugar is fully dissolved.
  7. Stir in the cardamom powder into the sugar syrup and mix well. This will add a beautiful aromatic note to the syrup.
  8. Dip each fried dough circle into the sugar syrup, ensuring they are well coated on all sides. Allow the excess syrup to drip off before transferring them to a serving plate.
