Khao Man Gai, a beloved Thai street food, is a sensory delight with an intriguing history. It's a simple yet comforting dish that consists of tender, poached chicken served over fluffy, fragrant jasmine rice, all brought together by a zesty dipping sauce. Ingredients

  • Whole chicken (1)
  • Jasmine rice (2 cups)
  • Garlic (4 cloves, minced)
  • Ginger (1 thumb-sized piece, grated)
  • Chicken broth (4 cups)
  • Soy sauce (3 tablespoons)
  • Fish sauce (2 tablespoons)
  • Sugar (2 tablespoons)
  • Cucumber (1, sliced)
  • Cilantro (1/2 cup, chopped)
  • Green onions (1/4 cup, chopped)
  • Lime (2, cut into wedges)

Instructions

  1. Start by bringing a large pot of water to a boil. Add the whole chicken and let it cook for about 40 minutes, or until the chicken is fully cooked through. Once done, remove the chicken from the pot and let it cool before shredding the meat. Set the shredded chicken aside.
  2. For the rice, rinse it under cold water until the water runs clear. Drain the rice well.
  3. In a large saucepan, heat a dash of oil over medium heat. Add the minced garlic and grated ginger. Keep stirring to prevent burning and cook until fragrant.
  4. Add the drained jasmine rice to the saucepan, stirring well to ensure each grain is coated with the fragrant garlic and ginger.
  5. Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for about 20 minutes, or until all the liquid is absorbed and the rice is tender.
  6. While the rice is cooking, prepare the sauce. In a small bowl, combine the soy sauce, fish sauce, and sugar, stirring until the sugar is fully dissolved.
  7. To serve, spoon a portion of the fragrant rice onto a plate. Top it with a generous amount of shredded chicken, a few cucumber slices, a sprinkle of freshly chopped cilantro and green onions. Drizzle the flavorful sauce over the dish just before eating.
