Khao Piak Sen

Khao Piak Sen is a traditional Laotian soup made with homemade rice noodles and a flavorful broth.

Ingredients

  • Salt and pepper (to taste)
  • Chili flakes (1 teaspoon)
  • Lime (1, cut into wedges)
  • Cilantro (1/4 cup, chopped)
  • Green onions (4, chopped)
  • Garlic (3 cloves, minced)
  • Ginger (1-inch piece, sliced)
  • Soy sauce (1 tablespoon)
  • Fish sauce (2 tablespoons)
  • Chicken breast (2, boneless and skinless)
  • Chicken broth (6 cups)
  • Water (1 cup)
  • Rice flour (2 cups)

Instructions

  1. In a large bowl, mix the rice flour and water to make a smooth batter.
  2. Bring a pot of water to a boil. Using a colander or a steamer basket, pour the batter over the holes, creating thin noodles. Cook for 2-3 minutes, then remove and rinse with cold water. Set aside.
  3. In a separate pot, bring the chicken broth to a boil. Add the chicken breasts, ginger, garlic, fish sauce, soy sauce, salt, and pepper. Reduce the heat and simmer for 30 minutes, or until the chicken is cooked through.
  4. Remove the chicken breasts from the broth and shred them using two forks. Return the shredded chicken to the broth.
  5. To serve, divide the rice noodles among bowls. Ladle the hot broth with chicken over the noodles.
  6. Garnish with chopped green onions, cilantro, chili flakes, and a squeeze of lime juice.
  7. Serve hot and enjoy!
