Instructions

  1. In a large bowl, combine rice flour with 2 cups of water and mix until a smooth batter forms.
  2. Bring a large pot of water to a boil. Pour the batter through a colander or steamer basket over the boiling water, creating thin noodles. Cook these noodles for 2-3 minutes until they are soft, then rinse them under cool water to stop the cooking process. Set the noodles aside for later use.
  3. In a separate pot, combine the chicken broth, minced garlic, minced ginger, soy sauce, fish sauce, and a pinch each of salt and pepper. Bring this mixture to a boil.
  4. Add the chicken breasts to the broth, reduce the heat, and let it simmer for about 30 minutes, or until the chicken is fully cooked.
  5. Take the chicken breasts out of the broth and let them cool enough to handle. Using two forks, shred the chicken into bite-sized pieces. Put the shredded chicken back into the simmering broth.
  6. To serve, divide the rice noodles among your serving bowls. Ladle the hot chicken broth with shredded chicken over the noodles.
  7. Garnish each bowl with a generous sprinkling of chopped green onions and cilantro. Add a pinch of chili flakes for a kick of heat and a squeeze of lime juice for a refreshing tang. Serve the Khao Piak Sen hot and savor the comforting warmth and rich flavors of this traditional Laotian dish.
