- Ginger (1 inch piece, minced)
- Soy sauce (2 tablespoons)
- Fish sauce (1 tablespoon)
- Chicken breast (2)
- Chicken broth (6 cups)
- Water (2 cups)
- Rice flour (2 cups)
Instructions
- In a large bowl, combine rice flour with 2 cups of water and mix until a smooth batter forms.
- Bring a large pot of water to a boil. Pour the batter through a colander or steamer basket over the boiling water, creating thin noodles. Cook these noodles for 2-3 minutes until they are soft, then rinse them under cool water to stop the cooking process. Set the noodles aside for later use.
- In a separate pot, combine the chicken broth, minced garlic, minced ginger, soy sauce, fish sauce, and a pinch each of salt and pepper. Bring this mixture to a boil.
- Add the chicken breasts to the broth, reduce the heat, and let it simmer for about 30 minutes, or until the chicken is fully cooked.
- Take the chicken breasts out of the broth and let them cool enough to handle. Using two forks, shred the chicken into bite-sized pieces. Put the shredded chicken back into the simmering broth.
- To serve, divide the rice noodles among your serving bowls. Ladle the hot chicken broth with shredded chicken over the noodles.
