
Khao Piak Sen
Khao Piak Sen is a traditional Laotian soup made with homemade rice noodles and a flavorful broth.
Ingredients
- Salt and pepper (to taste)
- Chili flakes (1 teaspoon)
- Lime (1, cut into wedges)
- Cilantro (1/4 cup, chopped)
- Green onions (4, chopped)
- Garlic (3 cloves, minced)
- Ginger (1-inch piece, sliced)
- Soy sauce (1 tablespoon)
- Fish sauce (2 tablespoons)
- Chicken breast (2, boneless and skinless)
- Chicken broth (6 cups)
- Water (1 cup)
- Rice flour (2 cups)
Instructions
- In a large bowl, mix the rice flour and water to make a smooth batter.
- Bring a pot of water to a boil. Using a colander or a steamer basket, pour the batter over the holes, creating thin noodles. Cook for 2-3 minutes, then remove and rinse with cold water. Set aside.
- In a separate pot, bring the chicken broth to a boil. Add the chicken breasts, ginger, garlic, fish sauce, soy sauce, salt, and pepper. Reduce the heat and simmer for 30 minutes, or until the chicken is cooked through.
- Remove the chicken breasts from the broth and shred them using two forks. Return the shredded chicken to the broth.
- To serve, divide the rice noodles among bowls. Ladle the hot broth with chicken over the noodles.
- Garnish with chopped green onions, cilantro, chili flakes, and a squeeze of lime juice.
- Serve hot and enjoy!
