Khatanii Huurga - A Taste of Mongolia
Immerse yourself in the heartwarming flavors of Mongolia with Khatanii Huurga, a traditional dish that's a symphony of succulent lamb, vibrant vegetables, and hearty noodles. This one-pot wonder is a testament to Mongolia's rich culinary heritage, offering a comforting, nourishing, and absolutely delicious meal.

Ingredients
- Green onions
- 1 bunch, chopped for garnish
- Noodles
- 200g, any type works, but egg noodles are traditionally used
- Salt and pepper
- to taste
- Soy sauce
- 2 tablespoons
- Ginger
- 1 inch, minced
- Garlic
- 2 cloves, minced
- Cabbage
- 1/2, chopped
- Potatoes
- 2 large, chopped into cubes
- Carrots
- 2 large, chopped into rounds
- Onion
- 1 large, chopped
- Lamb
- 500g, cut into chunks
- Oil
- 2 tablespoons, for cooking
Instructions
- Heat the oil in a large pot over medium heat.
- Add the lamb pieces and brown them on all sides. This should take about 5-7 minutes.
- Add the chopped onion, carrots, potatoes, cabbage, garlic, and ginger to the pot. Stir well and cook for about 5 minutes until the vegetables start to soften.
- Pour in enough water to fully cover all the ingredients in the pot. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 1.5 to 2 hours. During this time, the lamb will become wonderfully tender.
- While the lamb is simmering, cook the noodles according to their package instructions. Once cooked, drain and set them aside.
- When the lamb is tender, stir in the soy sauce and season with salt and pepper according to your taste.
- Add the cooked noodles to the pot, stirring them in so they're fully incorporated into the dish.
- Allow the dish to simmer for another 5 minutes. This will help the noodles absorb some of the flavors.
- Serve your Khatanii Huurga hot, garnished with a generous sprinkle of chopped green onions. Enjoy this taste of Mongolia!
