Authentic Indian Kheer (Rice Pudding)

Ingredients
- Raisins
- 1/4 cup
- Pistachios
- 1/4 cup, chopped
- Almonds
- 1/4 cup, sliced
- Saffron strands
- a pinch
- Cardamom pods
- 4, crushed
- Sugar
- 1/2 cup
- Milk
- 1 liter
- Basmati rice
- 1/4 cup, washed
Instructions
- In a large saucepan, bring the milk to a gentle boil over medium heat.
- Add the washed Basmati rice to the boiling milk, stir well, and reduce the heat to low.
- Allow the mixture to simmer for about 30 minutes. Make sure to stir occasionally to prevent the rice from sticking to the bottom of the pan.
- Once the rice is cooked and the mixture has thickened, add the sugar, crushed cardamom pods, and saffron strands. Stir well to combine.
- Let it simmer for an additional 5-10 minutes until the sugar is fully dissolved and the flavors are well integrated.
- Remove the saucepan from the heat and allow the Kheer to cool to room temperature.
- Once cooled, garnish the Kheer with the sliced almonds, chopped pistachios, and raisins.
- For best results, refrigerate the Kheer for at least 2 hours before serving it chilled.
