Ingredients

Original recipe serves 2

Gouda cheese
4 ounces, sliced
Cheddar cheese
4 ounces, sliced
Bread
4 slices (your choice, sourdough or whole grain recommended)
Unsalted butter
2 tablespoons, softened
Kimchi
1/2 cup, chopped

Instructions

  1. Heat a skillet or griddle over medium heat.
  2. Spread butter evenly on one side of each slice of bread.
  3. Place two slices of bread, buttered side down, on the skillet.
  4. Layer each slice with a portion of cheddar cheese, followed by gouda cheese, and then evenly distribute the chopped kimchi on top.
  5. Top with the remaining slices of bread, ensuring the buttered side is facing up.
  6. Cook for 3-4 minutes, or until the bottom slice of bread is golden brown and the cheese begins to melt.
  7. Carefully flip the sandwiches over and cook for another 3-4 minutes, or until the other side is golden brown and the cheese is fully melted.
  8. Remove from the skillet and let cool for a minute before slicing the sandwiches in half.
