Ingredients
- Gouda cheese
- 4 ounces, sliced
- Cheddar cheese
- 4 ounces, sliced
- Bread
- 4 slices (your choice, sourdough or whole grain recommended)
- Unsalted butter
- 2 tablespoons, softened
- Kimchi
- 1/2 cup, chopped
Instructions
- Heat a skillet or griddle over medium heat.
- Spread butter evenly on one side of each slice of bread.
- Place two slices of bread, buttered side down, on the skillet.
- Layer each slice with a portion of cheddar cheese, followed by gouda cheese, and then evenly distribute the chopped kimchi on top.
- Top with the remaining slices of bread, ensuring the buttered side is facing up.
- Cook for 3-4 minutes, or until the bottom slice of bread is golden brown and the cheese begins to melt.
- Carefully flip the sandwiches over and cook for another 3-4 minutes, or until the other side is golden brown and the cheese is fully melted.
- Remove from the skillet and let cool for a minute before slicing the sandwiches in half.
