  • Sugar (1 teaspoon)

Instructions

  1. Cook the udon noodles according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet, cook the sliced pork belly over medium heat until crispy, about 5-7 minutes. Once done, remove from the skillet and set aside, leaving the drippings in the pan.
  3. In the same skillet, add the sliced onion and minced garlic. Sauté until the onion becomes translucent, approximately 3-4 minutes.
  4. Add the chopped kimchi to the skillet and cook for 2-3 minutes until heated through and aromatic.
  5. Toss the cooked udon noodles into the skillet, mixing them with the kimchi and onion mixture until well combined.
  6. In a small bowl, whisk together the soy sauce, sesame oil, and sugar until the sugar dissolves. Pour the sauce over the noodles and stir to coat evenly.
  7. Return the crispy pork belly to the skillet and cook for an additional 2-3 minutes, stirring gently to combine all ingredients and heat through.
