Fruit juice (e.g., raspberry, cherry, or cranberry)
2 cups
Sugar
1/2 cup
Cornstarch
1/4 cup
Water
1 cup
Vanilla extract
1 teaspoon
Fresh fruit (for garnish, optional)
1/2 cup, diced (e.g., berries or cherries)

Instructions

  1. In a medium saucepan, combine the fruit juice and sugar. Bring to a gentle boil over medium heat, stirring occasionally to dissolve the sugar completely.
  2. While the juice is heating, in a separate bowl, whisk together the cornstarch and water until smooth, ensuring there are no lumps.
  3. Once the fruit juice mixture is boiling, slowly pour in the cornstarch mixture, stirring constantly to prevent clumping.
  4. Continue to cook and stir the mixture for about 2-3 minutes, or until it thickens to a pudding-like consistency. It should be thick enough to coat the back of a spoon.
  5. Remove the saucepan from heat and stir in the vanilla extract for added flavor.
  6. Let the kisiel cool for a few minutes before pouring it into individual serving bowls or a large dish.
  7. Refrigerate for at least 2 hours, or until fully set and chilled.
  8. Serve the kisiel chilled, garnished with fresh diced fruit if desired.
