Kitfo - Ethiopian Tartare

- 1 bunch, finely chopped Collard greens
- 1 cup Ayib (Ethiopian cottage cheese)

- 3 tablespoons Niter Kibbeh (Ethiopian spiced clarified butter)

Instructions
