  2. Divide the beef mixture into individual portions and shape them into small balls or patties, according to your preference.
  3. Lay out a piece of injera on each plate, and place a portion of the kitfo on top. Accompany this with a generous serving of ayib (cottage cheese) and collard greens on the side.
