Kitfo - Ethiopian Tartare

Ingredients
- Collard greens
- 1 bunch, finely chopped
- Ayib (Ethiopian cottage cheese)
- 1 cup

- 2 tablespoons
- Niter Kibbeh (Ethiopian spiced clarified butter)
- 3 tablespoons
- Beef
- 500g, minced and lean
Instructions
- In a large mixing bowl, combine the minced beef, niter kibbeh (spiced clarified butter), mitmita (spice blend), and salt. Ensure all ingredients are thoroughly mixed.
- Divide the beef mixture into individual portions and shape them into small balls or patties, according to your preference.
- Lay out a piece of injera on each plate, and place a portion of the kitfo on top. Accompany this with a generous serving of ayib (cottage cheese) and collard greens on the side.
- Enjoy this traditional Ethiopian meal by tearing off a piece of injera, wrapping some kitfo and ayib within, and savoring the explosion of flavors.
Tips
- For a more authentic experience, use your hands to eat kitfo.
