Tropical Kiwi Banana Bread

Ingredients

Vanilla extract
1 teaspoon

1 cup
Unsalted butter, melted

Baking soda
1 teaspoon
Baking powder
1 teaspoon
All-purpose flour
2 cups
Kiwi, diced
1 cup
Ripe bananas
1 cup, mashed

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until smooth. Add the diced kiwi and mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In another bowl, cream together the melted butter and sugar until well combined. Add the egg and vanilla extract and mix until smooth.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix to ensure a tender bread.
  6. Fold in the banana and kiwi mixture until evenly distributed.
  7. Pour the batter into the greased loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too fast, cover loosely with aluminum foil.
  9. Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer the bread to a wire rack to cool completely before slicing and serving. This will ensure the bread is easy to slice.
