Kiwi and Dark Chocolate Truffles

Indulge in these Kiwi and Dark Chocolate Truffles, a magical blend of the tropical tanginess of fresh kiwi and the velvety richness of dark chocolate. Each bite takes you on a journey of contrasting flavors, balancing the natural tartness of kiwi with the deep, luxurious notes of dark chocolate. A dusting of powdered sugar or cocoa powder offers a sweet or bitter ending, respectively, making these truffles an unforgettable dessert experience. This recipe dates back to the 19th century, when truffles were a delicacy in French cuisine, and we've added a twist with the kiwi to give it a vibrant, modern appeal.

Serves 15

Ingredients

Powdered sugar
1/2 cup, for dusting
Unsweetened cocoa powder
1/2 cup, for dusting
Heavy cream
1/2 cup
Dark chocolate
8 ounces, finely chopped
Kiwi
2, peeled and diced

Instructions

  1. Blend the diced kiwi in a blender or food processor until you get a smooth puree.
  2. In a heatproof bowl set over a pot of simmering water, melt the finely chopped dark chocolate, making sure to stir constantly for a smooth finish.
  3. Once the chocolate is fully melted, remove from heat and fold in the kiwi puree and heavy cream until the mixture is well combined.
  4. Cover the bowl with a cling wrap and chill in the refrigerator for at least 2 hours, or until the mixture is firm enough to shape.
  5. Once the mixture is chilled, use a spoon or a small ice cream scoop to portion the mixture. Roll each portion into a small ball to form truffle.
  6. Prepare two separate bowls, one with cocoa powder and another with powdered sugar. Roll each truffle ball in either cocoa powder or powdered sugar until they are fully coated.
  7. Place the coated truffles on a baking sheet lined with parchment paper, ensuring they are spaced apart to prevent them from sticking together.
  8. Refrigerate the truffles for another 30 minutes to allow them to set properly.
  9. Serve these delightful kiwi and dark chocolate truffles as a dessert or a sweet snack. Enjoy!

Tips

  • 💡 For a fun variation, you can substitute the kiwi with other fruits like strawberries or raspberries. You can also try rolling the truffles in crushed nuts or shredded coconut for a different texture.
