Kiwi and Dark Chocolate Truffles
Indulge in these Kiwi and Dark Chocolate Truffles, a magical blend of the tropical tanginess of fresh kiwi and the velvety richness of dark chocolate. Each bite takes you on a journey of contrasting flavors, balancing the natural tartness of kiwi with the deep, luxurious notes of dark chocolate. A dusting of powdered sugar or cocoa powder offers a sweet or bitter ending, respectively, making these truffles an unforgettable dessert experience. This recipe dates back to the 19th century, when truffles were a delicacy in French cuisine, and we've added a twist with the kiwi to give it a vibrant, modern appeal.
Ingredients
- Powdered sugar
- 1/2 cup, for dusting
- Unsweetened cocoa powder
- 1/2 cup, for dusting
- Heavy cream
- 1/2 cup
- Dark chocolate
- 8 ounces, finely chopped
- Kiwi
- 2, peeled and diced
Instructions
- Blend the diced kiwi in a blender or food processor until you get a smooth puree.
- In a heatproof bowl set over a pot of simmering water, melt the finely chopped dark chocolate, making sure to stir constantly for a smooth finish.
- Once the chocolate is fully melted, remove from heat and fold in the kiwi puree and heavy cream until the mixture is well combined.
- Cover the bowl with a cling wrap and chill in the refrigerator for at least 2 hours, or until the mixture is firm enough to shape.
- Once the mixture is chilled, use a spoon or a small ice cream scoop to portion the mixture. Roll each portion into a small ball to form truffle.
- Prepare two separate bowls, one with cocoa powder and another with powdered sugar. Roll each truffle ball in either cocoa powder or powdered sugar until they are fully coated.
- Place the coated truffles on a baking sheet lined with parchment paper, ensuring they are spaced apart to prevent them from sticking together.
- Refrigerate the truffles for another 30 minutes to allow them to set properly.
- Serve these delightful kiwi and dark chocolate truffles as a dessert or a sweet snack. Enjoy!
Tips
- For a fun variation, you can substitute the kiwi with other fruits like strawberries or raspberries. You can also try rolling the truffles in crushed nuts or shredded coconut for a different texture.
