Tropical Kiwi Fruit Salad

Ingredients
- Lime juice
- 1/4 cup, freshly squeezed
- Honey
- 2 tablespoons
- Mint leaves
- 1/4 cup, finely chopped
- Blueberries
- 1 cup, fresh or frozen
- Strawberries
- 1 cup, hulled and halved
- Kiwi
- 4, peeled and sliced
Instructions
- In a large serving bowl, add the sliced kiwi, halved strawberries, blueberries, and finely chopped mint leaves.
- In a separate small bowl, whisk together the freshly squeezed lime juice and honey until well combined. This will form your honey-lime dressing.
- Drizzle the honey-lime dressing over the fruit and mint mixture in the large bowl.
- Using a large spoon, gently toss the fruit salad to evenly distribute the dressing. Be careful not to bruise the fruit.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This allows the flavors to meld together and the fruit to chill.
