Serves 8

Ingredients

Mashed potatoes
2 cups, cooled
All-purpose flour
1 cup
Egg
1, large
Salt
1/2 teaspoon
Plums
8, pitted
Unsalted butter
1/2 cup
Breadcrumbs
1 cup
Powdered sugar
for dusting

Instructions

  1. In a large bowl, combine the cooled mashed potatoes, all-purpose flour, egg, and salt. Mix until well combined and a soft dough forms.
  2. Divide the dough into 8 equal portions, rolling each into a ball.
  3. Take one portion of dough and flatten it in your hand, creating a disc.
  4. Place a pitted plum in the center of the dough and wrap the dough around the plum, sealing it completely. Ensure there are no cracks.
  5. Repeat with the remaining dough and plums until all are filled.
  6. Bring a large pot of salted water to a boil over medium-high heat.
  7. Carefully drop the dumplings into the boiling water. Cook for about 10 minutes or until they float to the surface, indicating they are done.
  8. While the dumplings are cooking, melt the unsalted butter in a separate pan over medium heat.
  9. Add the breadcrumbs to the melted butter and cook, stirring frequently, until the breadcrumbs are golden brown and fragrant.
  10. Once the dumplings are cooked, remove them with a slotted spoon and gently roll them in the buttered breadcrumbs until well-coated.
  11. Serve the knedle warm, generously dusted with powdered sugar, and enjoy the delightful burst of sweet plum filling with each bite.

Tips

  • 💡 For added flavor, consider adding a pinch of cinnamon or nutmeg to the dough.
  • 💡 If you prefer, you can substitute other stone fruits like apricots or cherries for the plums.
  • 💡 To make the dumplings ahead of time, prepare and fill them, then freeze before boiling. Just boil them directly from the freezer without thawing.
