Ingredients
- Mashed potatoes
- 2 cups, cooled
- All-purpose flour
- 1 cup
- Egg
- 1, large
- Salt
- 1/2 teaspoon
- Plums
- 8, pitted
- Unsalted butter
- 1/2 cup
- Breadcrumbs
- 1 cup
- Powdered sugar
- for dusting
Instructions
- In a large bowl, combine the cooled mashed potatoes, all-purpose flour, egg, and salt. Mix until well combined and a soft dough forms.
- Divide the dough into 8 equal portions, rolling each into a ball.
- Take one portion of dough and flatten it in your hand, creating a disc.
- Place a pitted plum in the center of the dough and wrap the dough around the plum, sealing it completely. Ensure there are no cracks.
- Repeat with the remaining dough and plums until all are filled.
- Bring a large pot of salted water to a boil over medium-high heat.
- Carefully drop the dumplings into the boiling water. Cook for about 10 minutes or until they float to the surface, indicating they are done.
- While the dumplings are cooking, melt the unsalted butter in a separate pan over medium heat.
- Add the breadcrumbs to the melted butter and cook, stirring frequently, until the breadcrumbs are golden brown and fragrant.
- Once the dumplings are cooked, remove them with a slotted spoon and gently roll them in the buttered breadcrumbs until well-coated.
- Serve the knedle warm, generously dusted with powdered sugar, and enjoy the delightful burst of sweet plum filling with each bite.
