Kogt Torsk (Danish Boiled Cod)

Kogt Torsk is a beloved traditional Danish dish, celebrated for its simplicity and fresh flavors. This comforting meal features tender, flaky cod fillets that are gently boiled to perfection, served alongside creamy mustard sauce and fluffy boiled potatoes. The dish is beautifully garnished with fresh dill and lemon slices, making it not only delicious but also visually appealing. It embodies the essence of Scandinavian cuisine, where high-quality ingredients shine in their natural state, and is perfect for a cozy family dinner or a special occasion.

Ingredients

Cod fillets
4 (6 oz) fillets
Potatoes
4 medium, peeled and cut into chunks
Water
4 cups
Salt
1 tablespoon
Black pepper
to taste
Lemon
1, cut into wedges
Fresh dill
1/4 cup, chopped (plus extra for garnish)
Heavy cream
1 cup
Dijon mustard
1/4 cup

Instructions

  1. In a large pot, bring the water and salt to a rolling boil.
  2. Carefully add the cod fillets to the boiling water. Cook for 8-10 minutes, or until the fish is opaque and flakes easily with a fork. Once cooked, remove the fillets and drain on a plate.
  3. While the cod is cooking, place the peeled potato chunks in a separate pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes. Drain and set aside.
  4. In a small saucepan, heat the heavy cream over low heat. Once warmed, stir in the Dijon mustard and chopped dill, mixing well. Cook for an additional 2-3 minutes until heated through but not boiling.
  5. To serve, place the boiled cod fillets on a plate alongside the boiled potatoes. Drizzle the creamy mustard sauce over the cod, and garnish with lemon wedges and a sprinkle of black pepper. Finish with additional fresh dill for a pop of color and flavor.

Tips

  • 💡 For a lighter version, you can substitute the heavy cream with Greek yogurt mixed with a splash of milk.
  • 💡 Feel free to add capers or chopped pickles to the mustard sauce for an extra tangy flavor.
  • 💡 Pair this dish with a light salad or steamed vegetables to balance the meal.
