Experience the vibrant flavors of Korean cuisine with this authentic Kimchi Fried Rice. This dish, also known as 'Kimchi Bokkeumbap', is a fusion of spicy, tangy kimchi and savory ingredients cooked to perfection. The rich taste of bacon and the mild sweetness of onions balance the spicy kimchi, while the scrambled eggs add a delightful texture. This hearty and flavorful dish is great for a quick lunch or a flavorful weeknight dinner!

Ingredients

Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Green onions
2, chopped for garnish
Eggs
2
Sesame oil
2 tablespoons
Soy sauce
2 tablespoons
Garlic
2 cloves, minced
Onion
1 medium, diced
Bacon
4 slices, chopped
Kimchi
1 cup, chopped
Cooked rice
2 cups

Instructions

  1. Heat a large skillet or wok over medium heat.
  2. Add the chopped bacon and cook until crispy. Transfer the crispy bacon to a plate, leaving the bacon grease in the skillet.
  3. In the same skillet, sauté the diced onion and minced garlic until the onion becomes translucent.
  4. Add the chopped kimchi to the skillet and stir-fry for 2-3 minutes, until heated through.
  5. Push the kimchi mixture to one side of the skillet. On the empty side, crack the eggs and scramble until fully cooked.
  6. Combine the scrambled eggs with the kimchi mixture in the skillet.
  7. Add the cooked rice, soy sauce, and sesame oil. Stir well to combine all ingredients, ensuring the rice is well coated with the sauce and ingredients are evenly distributed.
  8. Continue to cook for additional 3-4 minutes, stirring occasionally, until the rice is heated through.
  9. Season with salt and pepper to taste. Add the cooked bacon back into the skillet and mix well.
