Ingredients

Watermelon
4 cups, cubed
Cucumber
1 large, thinly sliced
Green onions
2, thinly sliced
Fresh mint leaves
1/4 cup, finely chopped
Lime
juice of 1
Honey
2 tablespoons
Salt
1/2 teaspoon

Instructions

  1. In a large salad bowl, add the cubed watermelon, thinly sliced cucumber, sliced green onions, and finely chopped mint leaves.
  2. Prepare the dressing by whisking together the freshly squeezed lime juice, honey, and salt in a small bowl until well combined.
  3. Drizzle the tangy lime-honey dressing over the salad mixture.
  4. Gently toss all the ingredients together making sure that the dressing evenly coats the salad.
  5. Serve immediately for the most vibrant taste, or, if desired, refrigerate for up to 2 hours to allow the flavors to meld together more fully.
