Ingredients

  • Vegetable oil (2 tablespoons)
  • Onion, chopped (1 medium)
  • Carrot, julienned (1 medium)
  • Cabbage, shredded (2 cups)
  • Capsicum (Bell Pepper), sliced (1 medium)
  • Eggs, beaten (2 large)
  • Chili powder (1 teaspoon)
  • Turmeric powder (1/2 teaspoon)
  • Curry powder (1 tablespoon)
  • Salt (to taste)
  • Roti, shredded (4 pieces (approximately 3 cups))
  • Fresh coriander, chopped (1/4 cup)
  • Lime wedges (for serving)

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the chopped onion to the pan and sauté until translucent, about 3-4 minutes, stirring occasionally.
  3. Incorporate the julienned carrot, shredded cabbage, and sliced capsicum into the pan. Stir-fry for 2-3 minutes until the vegetables are slightly tender yet still vibrant.
  4. Push the sautéed vegetables to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through, about 2 minutes. Mix the scrambled eggs with the vegetables.
  5. Add the shredded roti to the pan and toss well to combine with the vegetables and scrambled eggs, ensuring everything is evenly mixed.
  6. Sprinkle the curry powder, turmeric powder, chili powder, and salt over the mixture. Stir-fry for another 3-4 minutes until everything is well combined and heated through.
  7. Remove the pan from heat and garnish with freshly chopped coriander before serving.
  8. Serve hot with lime wedges on the side for a zesty finish.
