Kropsu (Finnish Pancakes)

- 1 cup All-purpose flour
- 2 tablespoons Granulated sugar
- 1 teaspoon Baking powder
- 1/4 teaspoon Salt
- 1, large Egg
- 1 cup Milk
- 2 tablespoons, melted, plus extra for greasing Unsalted butter
- to serve Lingonberry jam or maple syrup

Instructions
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate bowl, beat the egg. Add in the milk and 2 tablespoons of melted butter, and whisk until well combined.
- Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if the batter is a little lumpy.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with extra butter to prevent sticking.
- Pour 1/4 cup of batter onto the heated skillet for each pancake. Cook until bubbles form on the surface, usually around 2-3 minutes. Flip the pancake and cook for another 1-2 minutes, until golden brown and cooked through.
- Repeat with the remaining batter, regreasing the skillet as needed.
