Ingredients

Original recipe serves 4

All-purpose flour
1 cup
Granulated sugar
2 tablespoons
Baking powder
1 teaspoon
Salt
1/4 teaspoon
Egg
1, large
Milk
1 cup
Unsalted butter
2 tablespoons, melted, plus extra for greasing
Lingonberry jam or maple syrup
to serve

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  2. In a separate bowl, beat the egg. Add in the milk and 2 tablespoons of melted butter, and whisk until well combined.
  3. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if the batter is a little lumpy.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with extra butter to prevent sticking.
  5. Pour 1/4 cup of batter onto the heated skillet for each pancake. Cook until bubbles form on the surface, usually around 2-3 minutes. Flip the pancake and cook for another 1-2 minutes, until golden brown and cooked through.
  6. Repeat with the remaining batter, regreasing the skillet as needed.
  7. Serve the Kropsu warm, topped with your choice of lingonberry jam or maple syrup. Enjoy a taste of Finland!
