Servings: 6-8

Ingredients

Rye flour
2 cups
Cold butter
1/2 cup, cubed
Cold water
1/2 cup
Salt
1 teaspoon, for crust + more to taste
Diced beef
1 cup, cooked
Salmon fillet
1 cup, skinless and deboned, diced
Onion
1 medium, finely chopped
Fresh dill
2 tablespoons, chopped
Pepper
to taste
Butter
for greasing the baking dish

Instructions

  1. In a large bowl, combine the rye flour, cold butter, cold water, and 1 teaspoon of salt. Mix until the dough starts to come together.
  2. Knead the dough on a lightly floured surface until smooth and elastic, about 5-7 minutes. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat the oven to 350°F (175°C).
  4. In a mixing bowl, combine the diced beef, salmon, chopped onion, chopped dill, and salt and pepper to taste. Mix until well combined.
  5. Divide the chilled dough into two equal portions. Roll out one portion into a circle large enough to line the bottom and sides of a greased round baking dish (approximately 9 inches in diameter).
  6. Carefully place the rolled-out dough into the baking dish, pressing it against the sides.
  7. Fill the dough with the meat and fish mixture, spreading it evenly.
  8. Roll out the second portion of dough into a circle large enough to cover the filling. Place it on top of the filling and seal the edges by pressing them together.
  9. Make a small hole in the center of the top crust to allow steam to escape.
  10. Bake in the preheated oven for 2 hours, or until the crust is golden brown and the filling is cooked through.
  11. Remove from the oven and let it cool for a few minutes before serving. Slice and serve warm.
