Kukko - Traditional Finnish Meat and Fish Pie

Ingredients
- 2 cups Rye flour
- 1/2 cup, cubed Cold butter
- 1/2 cup Cold water
- 1 teaspoon, for crust + more to taste Salt
- 1 cup, cooked Diced beef
- 1 cup, skinless and deboned, diced Salmon fillet
- 1 medium, finely chopped Onion
- 2 tablespoons, chopped Fresh dill
- to taste Pepper
- for greasing the baking dish Butter

Instructions
- In a large bowl, combine the rye flour, cold butter, cold water, and 1 teaspoon of salt. Mix until the dough starts to come together.
- Knead the dough on a lightly floured surface until smooth and elastic, about 5-7 minutes. Wrap in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the diced beef, salmon, chopped onion, chopped dill, and salt and pepper to taste. Mix until well combined.
- Divide the chilled dough into two equal portions. Roll out one portion into a circle large enough to line the bottom and sides of a greased round baking dish (approximately 9 inches in diameter).
- Carefully place the rolled-out dough into the baking dish, pressing it against the sides.
- Fill the dough with the meat and fish mixture, spreading it evenly.
- Roll out the second portion of dough into a circle large enough to cover the filling. Place it on top of the filling and seal the edges by pressing them together.
- Make a small hole in the center of the top crust to allow steam to escape.
- Bake in the preheated oven for 2 hours, or until the crust is golden brown and the filling is cooked through.
- Remove from the oven and let it cool for a few minutes before serving. Slice and serve warm.
