Ingredients

Wheat flour
2 cups
Water
3/4 cup
Salt
1/2 teaspoon
Chicken broth
4 cups
Soy sauce
2 tablespoons
Sesame oil
1 tablespoon
Garlic
3 cloves, minced
Green onions
2, chopped (plus extra for garnish)
Eggs
2, beaten
Roasted seaweed
1 sheet, crumbled (for garnish)

Instructions

  1. In a large mixing bowl, combine the wheat flour, water, and salt. Knead the dough until it is smooth and elastic, about 5-7 minutes.
  2. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into thin noodles, approximately 1/4 inch wide.
  3. Bring a pot of water to a boil. Cook the noodles until they are tender, about 3-5 minutes. Drain and set aside.
  4. In a separate pot, bring the chicken broth to a boil. Add the soy sauce, sesame oil, minced garlic, and chopped green onions. Reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  5. In a small bowl, beat the eggs. Slowly pour the beaten eggs into the simmering broth, stirring gently to create delicate egg ribbons.
  6. Divide the cooked noodles among serving bowls. Ladle the hot broth over the noodles.
  7. Garnish each bowl with crumbled roasted seaweed and additional chopped green onions.
