Kulcha is a beloved Indian flatbread, known for its soft, fluffy texture and rich flavor, making it a staple in Indian and Pakistani cuisine. The origins of kulcha trace back to the Punjab region, where it is often served at festive occasions and family gatherings. This versatile bread can be enjoyed plain or infused with fresh herbs like coriander and mint, and it pairs perfectly with a variety of curries and stews. With its golden-brown crust and warm, tender interior, kulcha elevates any meal, enveloping your taste buds in a delightful experience. This recipe celebrates the traditional method of preparation while allowing for personal touches.

Servings: 4

Ingredients

All-purpose flour
2 cups
Baking powder
1 teaspoon
Baking soda
1/2 teaspoon
Granulated sugar
1 teaspoon
Salt
1 teaspoon
Yogurt
1/2 cup
Warm milk
1/2 cup
Butter
2 tablespoons, melted
Fresh coriander or mint
1/4 cup, finely chopped (optional)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, sugar, and salt. Whisk well to ensure even distribution.
  2. Add the yogurt and warm milk to the dry ingredients. If desired, fold in the finely chopped coriander or mint for an aromatic touch. Mix until a soft dough forms.
  3. Transfer the dough onto a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic.
  4. Cover the dough with a damp cloth and allow it to rest in a warm place for 2 hours. This resting period is crucial for developing flavors and improving the texture.
  5. Once the dough has rested, divide it into 4 equal portions and roll each portion into a ball.
  6. Flatten each ball with a rolling pin into a circle approximately 6 inches in diameter, ensuring an even thickness throughout.
  7. Heat a skillet or tawa over medium heat. Place each kulcha in the skillet and cook for 2-3 minutes on each side, or until golden brown and fully cooked.
  8. While still hot, generously brush each kulcha with melted butter for a rich finish. Serve immediately.
