Instructions
- In a small bowl, dissolve the kudzu root starch in 1/4 cup of cold water, stirring until there are no lumps.
- In a medium pot, combine the remaining 1 3/4 cups of water and bring it to a gentle boil over medium heat.
- Once boiling, reduce the heat to low and gradually pour in the kudzu mixture, stirring continuously with a whisk or wooden spoon.
- Continue stirring until the mixture thickens and becomes translucent, which should take about 5-7 minutes.
- Add the brown sugar or matcha powder to the thickened mixture, stirring until fully dissolved and well combined.
- Remove from heat and pour the kuzuyu into cups. If desired, add your choice of toppings such as crushed nuts, sweetened red bean paste, or a drizzle of honey for added flavor and texture.
