Ingredients

Kudzu root starch
2 tablespoons
Water
2 cups, divided

Instructions

  1. In a small bowl, dissolve the kudzu root starch in 1/4 cup of cold water, stirring until there are no lumps.
  2. In a medium pot, combine the remaining 1 3/4 cups of water and bring it to a gentle boil over medium heat.
  3. Once boiling, reduce the heat to low and gradually pour in the kudzu mixture, stirring continuously with a whisk or wooden spoon.
  4. Continue stirring until the mixture thickens and becomes translucent, which should take about 5-7 minutes.
  5. Add the brown sugar or matcha powder to the thickened mixture, stirring until fully dissolved and well combined.
  6. Remove from heat and pour the kuzuyu into cups. If desired, add your choice of toppings such as crushed nuts, sweetened red bean paste, or a drizzle of honey for added flavor and texture.
