Kuzuyu

Kuzuyu is a warming traditional Japanese dessert drink made from kudzu root starch, celebrated for its smooth, velvety texture and delightful sweetness. Often enjoyed during the chilly winter months, this comforting drink can be flavored with rich brown sugar or earthy matcha powder, making it both a treat and a nod to health. This ancient beverage not only satisfies your sweet tooth but also offers numerous health benefits, including digestive support and immune system boosts. Savor a cup of kuzuyu to feel cozy and nurtured, just like in the heart of Japan's winter season.

Serves 2

Ingredients

Kudzu root starch
2 tablespoons
Water
2 cups, divided
Brown sugar or matcha powder
2 tablespoons (to taste)
Optional toppings
to taste (e.g., crushed nuts, sweetened red bean paste, or a drizzle of honey)

Instructions

  1. In a small bowl, dissolve the kudzu root starch in 1/4 cup of cold water, stirring until there are no lumps.
  2. In a medium pot, combine the remaining 1 3/4 cups of water and bring it to a gentle boil over medium heat.
  3. Once boiling, reduce the heat to low and gradually pour in the kudzu mixture, stirring continuously with a whisk or wooden spoon.
  4. Continue stirring until the mixture thickens and becomes translucent, which should take about 5-7 minutes.
  5. Add the brown sugar or matcha powder to the thickened mixture, stirring until fully dissolved and well combined.
  6. Remove from heat and pour the kuzuyu into cups. If desired, add your choice of toppings such as crushed nuts, sweetened red bean paste, or a drizzle of honey for added flavor and texture.
  7. Serve warm and enjoy the soothing experience of this traditional Japanese drink.

Tips

  • 💡 For a richer flavor, use a higher quality matcha powder.
  • 💡 Experiment with different sweeteners such as honey or agave syrup if you prefer a different taste.
  • 💡 Kuzuyu can also be enjoyed chilled in warmer months; simply refrigerate after preparation and serve over ice.
