Ingredients
- Vegetable oil
- 2 tablespoons
- Onion
- 1 large, finely chopped
- Garlic
- 4 cloves, minced
- Ginger
- 1 tablespoon, grated
- Lamb
- 2 pounds, cut into 1-inch cubes
- Tomatoes
- 2 cups, diced (fresh or canned)
- Yogurt
- 1 cup, plain
- Curry powder
- 2 tablespoons
- Turmeric
- 1 teaspoon
- Cumin
- 1 teaspoon
- Coriander
- 1 teaspoon
- Cayenne pepper
- 1/2 teaspoon (adjust to taste)
- Salt
- 1 teaspoon, or to taste
- Fresh cilantro
- 1/4 cup, chopped (for garnish)
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the finely chopped onions and sauté until they become soft and golden, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Increase the heat to medium-high and add the lamb cubes. Brown the meat on all sides, approximately 10 minutes.
- Stir in the diced tomatoes, yogurt, curry powder, turmeric, cumin, coriander, cayenne pepper, and salt. Mix well to combine all the ingredients.
- Cover the pot and reduce the heat to low. Let the curry simmer for 1 hour, stirring occasionally, until the lamb is tender and the flavors have melded beautifully.
- Taste and adjust seasoning if necessary. Garnish with freshly chopped cilantro before serving.
- Serve hot with steamed rice or warm naan to soak up the flavorful sauce.
