Ingredients

Original recipe serves 6

Vegetable oil
2 tablespoons
Onion
1 large, finely chopped
Garlic
4 cloves, minced
Ginger
1 tablespoon, grated
Lamb
2 pounds, cut into 1-inch cubes
Tomatoes
2 cups, diced (fresh or canned)
Yogurt
1 cup, plain
Curry powder
2 tablespoons
Turmeric
1 teaspoon
Cumin
1 teaspoon
Coriander
1 teaspoon
Cayenne pepper
1/2 teaspoon (adjust to taste)
Salt
1 teaspoon, or to taste
Fresh cilantro
1/4 cup, chopped (for garnish)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the finely chopped onions and sauté until they become soft and golden, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Increase the heat to medium-high and add the lamb cubes. Brown the meat on all sides, approximately 10 minutes.
  5. Stir in the diced tomatoes, yogurt, curry powder, turmeric, cumin, coriander, cayenne pepper, and salt. Mix well to combine all the ingredients.
  6. Cover the pot and reduce the heat to low. Let the curry simmer for 1 hour, stirring occasionally, until the lamb is tender and the flavors have melded beautifully.
  7. Taste and adjust seasoning if necessary. Garnish with freshly chopped cilantro before serving.
  8. Serve hot with steamed rice or warm naan to soak up the flavorful sauce.
